Instructions:

  1. Prepare the Sweet Potatoes:
    • Boil the sweet potatoes until tender.
    • Peel and mash the sweet potatoes.
  2. Make the Casserole:
    • In a large bowl, combine the mashed sweet potatoes with softened butter, sugar, eggs, evaporated milk, and orange juice concentrate. Mix well.
    • Spread the mixture into a 13×9 inch baking pan.
  3. Prepare the Topping:
    • In a separate bowl, mix the self-rising flour, light brown sugar, salt, and chopped pecans.
    • Spoon the topping evenly over the casserole.
  4. Add the Drizzle:
    • Drizzle 1 cup of melted butter over the casserole.
  5. Bake:
    • Bake at 350°F for 30-40 minutes, or until golden and bubbly.
