Grandma’s Sweet Potato Casserole
Casserole Ingredients:
- 6-7 Sweet Potatoes
- 1 1/2 cups sugar
- 2/3 cup butter (softened)
- 4 eggs
- 1 cup evaporated milk
- 2 tbsp frozen orange juice concentrate
Topping Ingredients:
- 2/3 cup self-rising flour
- 2 cups light brown sugar
- 1/2 tsp salt
- 1 cup chopped pecans
Drizzle:
- 1 cup butter (melted)
Instructions:
- Prepare the Sweet Potatoes:
- Boil the sweet potatoes until tender.
- Peel and mash the sweet potatoes.
- Make the Casserole:
- In a large bowl, combine the mashed sweet potatoes with softened butter, sugar, eggs, evaporated milk, and orange juice concentrate. Mix well.
- Spread the mixture into a 13×9 inch baking pan.
- Prepare the Topping:
- In a separate bowl, mix the self-rising flour, light brown sugar, salt, and chopped pecans.
- Spoon the topping evenly over the casserole.
- Add the Drizzle:
- Drizzle 1 cup of melted butter over the casserole.
- Bake:
- Bake at 350°F for 30-40 minutes, or until golden and bubbly.
