Grilled Skirt Steak Pinwheels with Cowboy Butter – skirt steak, cheese and spinach rolled up
and grilled, then dipped in Cowboy butter

Equipment
- 2 Sheets of plastic wrap or parchment paper
- 1 Meat mallet – or other device to pound the steak flat
- 36 skewers
- Small pot
Ingredients
- 3 Skirt steaks 3-3.5 lbs
- Favorite Salt, Pepper, Garlic base rub
- Favorite Beef/BBQ Rub
- 18 slices Mozzarella or other favorite Italian cheese
- 12 Slices Hard Salami or other favorite Italian deli meat
- 4 ounces Fresh spinach, chopped
- Crushed Red Pepper Flakes
- 8 oz Unsalted Butter
- 1 Tbsp chopped parsley
- 1 Tbsp minced garlic
- ½ Tbsp Dijon Mustard
- 1 Tbsp lemon juice
Instructions
- Lay out the skirt steaks between the plastic wrap or parchment paper and pound out
- Cut the three skirt steaks to all be the same length
- Season both sides of the skirt steak with Salt, Pepper, Garlic Rub
- Lay down four slices of deli meat on each skirt steak leaving and inch or so at the end
- Lay down six slices of cheese on each skirt steak, leaving an inch or so at the end
- Top the cheese with the fresh spinach
- Sprinkle red pepper flakes to taste on spinach
- Roll up the skirt steak and then skewer the end every inch or so
- Slice the rolled up skirt steak into pinwheels
- Season the outside of the rolled up skirt steak with your favorite BBQ rub
- Prepare the grill for two zone or indirect grilling with the target temperature inside the grill
of 250F - Smoke the rolled up skirt steak until it reaches 125F
- Crank up the heat of the grill to north of 400F and sear the steak on the bottom and the
sides - Once the steak is seared, and reaches about 140F, remove them from the grill and allow
to rest for at least 5 minutes - While pin wheels are cooking or resting, in a pot melt the butter over medium low heat
- Once the butter is melted and bubbling, add minced garlic, Dijon mustard, crushed red
pepper to taste and 1 tsp Salt, Pepper, Garlic rub , let cook for a few minutes stirring, then add
parsley and lemon juice - When ready to serve either pout cowboy butter over pinwheels, or use as a dip.
