Mashed Potatoes
Ingredients:
- 6 pounds of potatoes (3 lbs Yukon Gold and 3 lbs Russet)
- 16 oz sour cream
- 3 sticks of butter (cut into quarters for easier melting)
- 1 1/2 cups Dukes Mayonnaise
- 2 cups heavy whipping cream
- SPG seasoning (salt, pepper, garlic) to taste
Instructions:
- Prepare the Potatoes:
- Use 6 pounds of potatoes (mix of Yukon Gold and Russet or any potatoes you prefer for creamy texture).
- Important: Do NOT peel the potatoes. The peel adds flavor.
- Cut the potatoes into quarters or halves before boiling for even cooking.
- Cook the Potatoes:
- Bring the cut potatoes to a boil in salted water.
- Once soft (after about 10-15 minutes), drain the potatoes.
- Mash and Mix:
- Use a hand-held potato smasher to mash the potatoes to your desired consistency.
- Add the Ingredients:
- Add 1 tub (16 oz) sour cream.
- Add 3 sticks of butter (cut into 1/4s for easy melting).
- Stir in 1 1/2 cups Dukes Mayonnaise.
- Pour in 2 cups of heavy whipping cream for extra creaminess.
- Season and Serve:
- Season with SPG (salt, pepper, and garlic) to taste.
- Mix everything until smooth and creamy, then serve and enjoy!
